We invite you to prepare Homemade Cheese with Black Caraway Seeds. Instead of black caraway, you can use sun-dried tomatoes, fenugreek, or any other spice of your choice.
Ingredients:
- 1 kg (2.2 lbs) of full-fat cottage cheese
- 0.4 L (1 ¾ cups) of milk
- 1 egg yolk
- 1 whole egg
- 1 tablespoon of vinegar
- 1 tablespoon of baking soda
- A pinch of salt
- 3 tablespoons of butter
- Favorite additions: caraway seeds, pepper, sun-dried tomatoes, fenugreek
Instructions:
- Place the cottage cheese in a pot with the milk. Cook for about 10 minutes after the mixture begins to boil.
- The cottage cheese should separate into small curds. Strain the curds through a sieve or cheesecloth.
- In a pot, melt the butter and add the strained cheese. Mix in the egg yolk and whole egg.
- Heat the mixture over low heat, stirring continuously to ensure the egg is fully incorporated and doesn’t curdle. Add vinegar and baking soda. The mixture will start to expand in volume.
- Mix in your preferred spices.
- Grease a glass bowl with butter and transfer the cheese mixture into it. Knead lightly if desired. Let the cheese cool and set.
