Homemade cheese from cottage cheese and milk

Ingredients:

  • Milk – 1 liter
  • Cottage cheese – 1 kg
  • Chicken egg – 1-2 pcs
  • Butter – 50 g
  • Baking soda – 1 tsp
  • Salt – to taste

Preparation:

  1. Pour the milk into a large pot and bring it to a boil. Reduce the heat to low.
  2. Add the cottage cheese to the milk, stir thoroughly, and cook for 5 minutes until the whey separates, stirring constantly.
  3. Line a colander with a double layer of cheesecloth, and use a slotted spoon to transfer the curd mixture into the colander.
  4. Let it drain for 15 minutes to allow the whey to run off.
  5. Tie the ends of the cheesecloth to form a bundle, and hang it over the sink or a pot until the whey stops dripping.
  6. Mix the egg yolks with softened butter. Add salt, baking soda, and beat with a mixer until smooth and uniform.
  7. Break the drained curd mixture into small pieces, and mix it with the eggs and butter using a mixer.
  8. Pour the mixture into a pot and place it in a double boiler.
  9. Bring the water in the double boiler to a boil, then cook the cheese mixture for 10 minutes, stirring constantly. The cheese should become stretchy.
  10. Transfer the cheese mixture into a prepared mold and refrigerate for 2-3 hours to set. To give the cheese a firmer consistency, you can place a small weight on top.
