We suggest making Homemade cheese from cottage cheese and milk.
Ingredients:
- Milk – 1 liter
- Cottage cheese – 1 kg
- Chicken egg – 1-2 pcs
- Butter – 50 g
- Baking soda – 1 tsp
- Salt – to taste
Preparation:
- Pour the milk into a large pot and bring it to a boil. Reduce the heat to low.
- Add the cottage cheese to the milk, stir thoroughly, and cook for 5 minutes until the whey separates, stirring constantly.
- Line a colander with a double layer of cheesecloth, and use a slotted spoon to transfer the curd mixture into the colander.
- Let it drain for 15 minutes to allow the whey to run off.
- Tie the ends of the cheesecloth to form a bundle, and hang it over the sink or a pot until the whey stops dripping.
- Mix the egg yolks with softened butter. Add salt, baking soda, and beat with a mixer until smooth and uniform.
- Break the drained curd mixture into small pieces, and mix it with the eggs and butter using a mixer.
- Pour the mixture into a pot and place it in a double boiler.
- Bring the water in the double boiler to a boil, then cook the cheese mixture for 10 minutes, stirring constantly. The cheese should become stretchy.
- Transfer the cheese mixture into a prepared mold and refrigerate for 2-3 hours to set. To give the cheese a firmer consistency, you can place a small weight on top.
