Ingredients:
- 250 g (8.8 oz) Matias herring in oil
- 2 eggs
- 1 bell pepper
- 3 small pickled cucumbers
- 1 apple
- 2-3 tablespoons of lemon juice (depending on the apple’s acidity)
- 1 small onion
- A couple of tablespoons of mayonnaise
- Ground black pepper
Instructions:
- Boil the eggs until hard. Cool them, peel, and cut into medium-sized cubes.
- Place the onion in a bowl, dice it finely, and pour boiling water over it. Let it sit briefly and drain.
- Rinse the herring under cold water, pat it dry with a paper towel, and cut it into strips about 1.5 cm (0.6 in) thick.
- Wash the bell pepper, remove the seeds, and cut it into cubes.
- Peel the apple, remove the seeds, and dice it. Sprinkle it with lemon juice to prevent browning.
- Combine all salad ingredients in a bowl and mix with mayonnaise. Avoid adding salt, as the herring is already salty. Simply season with ground black pepper. If necessary, add more lemon juice.
- Chill the salad in the refrigerator for about 2 hours before serving. Garnish with parsley if desired.
