Herring Salad with Egg and Pepper

We suggest preparing a Herring Salad with Egg and Pepper. Matias herring, eggs, bell pepper, pickled cucumbers, onion, and apple create an intriguing flavor combination. The easiest way is to use ready-to-eat Matias herring in oil. Alternatively, you can purchase regular salted herring. However, they are often too salty and need to be soaked in cold water for about 1-2 hours to remove excess salt.

Ingredients:

  • 250 g (8.8 oz) Matias herring in oil
  • 2 eggs
  • 1 bell pepper
  • 3 small pickled cucumbers
  • 1 apple
  • 2-3 tablespoons of lemon juice (depending on the apple’s acidity)
  • 1 small onion
  • A couple of tablespoons of mayonnaise
  • Ground black pepper

Instructions:

  1. Boil the eggs until hard. Cool them, peel, and cut into medium-sized cubes.
  2. Place the onion in a bowl, dice it finely, and pour boiling water over it. Let it sit briefly and drain.
  3. Rinse the herring under cold water, pat it dry with a paper towel, and cut it into strips about 1.5 cm (0.6 in) thick.
  4. Wash the bell pepper, remove the seeds, and cut it into cubes.
  5. Peel the apple, remove the seeds, and dice it. Sprinkle it with lemon juice to prevent browning.
  6. Combine all salad ingredients in a bowl and mix with mayonnaise. Avoid adding salt, as the herring is already salty. Simply season with ground black pepper. If necessary, add more lemon juice.
  7. Chill the salad in the refrigerator for about 2 hours before serving. Garnish with parsley if desired.
