Hearty Vegetable Stew

We suggest you prepare Hearty Vegetable Stew.

Ingredients:

  • 0.5 kg potatoes
  • 1 large zucchini
  • 2 bell peppers
  • 1 onion
  • 0.5 kg tomatoes
  • 3 cloves garlic
  • 200g feta cheese
  • 0.5 L vegetable broth
  • Olive oil
  • Ground chili pepper, basil
  • Salt, pepper

Instructions:

  1. Cut the potatoes, peppers, and zucchini into cubes. Blanch the tomatoes and cut them into similar-sized pieces. Slice the onion into half-moons.
  2. Sauté the potatoes in hot oil until golden brown and transfer to a deep skillet. Pour in some of the vegetable broth and simmer over low heat, ensuring the potatoes don’t fall apart.
  3. Sauté the onion until softened, then add the peppers. Combine with the potatoes, sauté the zucchini in batches and add to the dish, stirring gently. Season with basil, salt, pepper, and paprika. Add the remaining broth.
  4. Lightly sauté the tomatoes and add to the pot. Simmer, covered, over low heat.
  5. Serve in bowls and crumble feta cheese on top.
