Hearty chicken and pea soup

We suggest making Hearty chicken and pea soup.

Ingredients:

  • 1 cup (200ml) dried green peas
  • 0.5 kg chicken breast
  • 1 carrot
  • 1 onion
  • 2 potatoes
  • Salt to taste
  • Dried herbs to taste

Instructions:

  1. Soak the peas: If using whole dried peas, soak them overnight. If using split peas, soaking is optional.
  2. Cook the peas: Rinse the peas and bring them to a boil. Add a pinch of baking soda to help the peas cook faster without turning into mush. Be careful to prevent the foam from overflowing.
  3. Add chicken: After 20-25 minutes, add the diced chicken breast and salt to taste.
  4. Sauté vegetables and add to soup: Sauté the diced onion and carrot in oil. Add the sautéed vegetables to the soup.
  5. Add potatoes: Add diced potatoes to the soup and cook until all vegetables are tender.
  6. Serve: Serve hot with sour cream and fresh parsley. Croutons or bread are a great accompaniment.
