We suggest making Hearty chicken and pea soup.
Ingredients:
- 1 cup (200ml) dried green peas
- 0.5 kg chicken breast
- 1 carrot
- 1 onion
- 2 potatoes
- Salt to taste
- Dried herbs to taste
Instructions:
- Soak the peas: If using whole dried peas, soak them overnight. If using split peas, soaking is optional.
- Cook the peas: Rinse the peas and bring them to a boil. Add a pinch of baking soda to help the peas cook faster without turning into mush. Be careful to prevent the foam from overflowing.
- Add chicken: After 20-25 minutes, add the diced chicken breast and salt to taste.
- Sauté vegetables and add to soup: Sauté the diced onion and carrot in oil. Add the sautéed vegetables to the soup.
- Add potatoes: Add diced potatoes to the soup and cook until all vegetables are tender.
- Serve: Serve hot with sour cream and fresh parsley. Croutons or bread are a great accompaniment.
