Here’s a delightful recipe for Hawaiian Somen. Somen is a long, thin, white wheat noodle.
Ingredients:
- 1/2 cup soy sauce
- 1/2 cup rice vinegar
- 1/8 cup sugar
- 1/2 cup vegetable oil
- 3 cups cooked somen noodles (spaghetti can also be used)
- 3 cups chopped romaine lettuce
- 1 small cucumber, finely chopped
- 1/2 can of canned ham, diced
- 4 eggs
- 1 tsp sesame seeds
Instructions:
- Place soy sauce, rice vinegar, and sugar in a jar and seal tightly. Shake well until the sugar dissolves.
- Add the vegetable oil to the mixture and refrigerate.
- Arrange the noodles at the bottom of a deep serving bowl. Layer with romaine lettuce and then the cucumbers. Cover with plastic wrap and refrigerate.
- Dice the canned ham into small cubes and sauté in a pan until golden brown.
- Beat the eggs and cook them into a thin omelet, then slice into small pieces.
- Add the egg pieces and sautéed ham to the salad. Sprinkle with sesame seeds.
- Shake the dressing well and serve it separately for individual portions.
