Hawaiian Somen Noodles

Here’s a delightful recipe for Hawaiian Somen. Somen is a long, thin, white wheat noodle.

Ingredients:

  • 1/2 cup soy sauce
  • 1/2 cup rice vinegar
  • 1/8 cup sugar
  • 1/2 cup vegetable oil
  • 3 cups cooked somen noodles (spaghetti can also be used)
  • 3 cups chopped romaine lettuce
  • 1 small cucumber, finely chopped
  • 1/2 can of canned ham, diced
  • 4 eggs
  • 1 tsp sesame seeds

Instructions:

  1. Place soy sauce, rice vinegar, and sugar in a jar and seal tightly. Shake well until the sugar dissolves.
  2. Add the vegetable oil to the mixture and refrigerate.
  3. Arrange the noodles at the bottom of a deep serving bowl. Layer with romaine lettuce and then the cucumbers. Cover with plastic wrap and refrigerate.
  4. Dice the canned ham into small cubes and sauté in a pan until golden brown.
  5. Beat the eggs and cook them into a thin omelet, then slice into small pieces.
  6. Add the egg pieces and sautéed ham to the salad. Sprinkle with sesame seeds.
  7. Shake the dressing well and serve it separately for individual portions.
