Let’s make a classic Gypsy Soup!
Ingredients:
- 400 grams of any type of sausage
- 600 grams of bell peppers
- 2 medium carrots
- 1/2 kg potatoes
- A handful of small pasta
- 1 small onion
- Salt
- Bay leaf
- Black peppercorns, sweet paprika, and chili powder
- Oil
Instructions:
- Sauté the base: Slice the sausage and gently fry it in 2 tablespoons of oil. Add finely chopped onion to the browned sausage and sauté together. Then add the bell peppers, sliced into strips, and cook, stirring frequently, for about 5 minutes.
- Combine ingredients: Bring 1.5 liters of water to a boil. Add the sautéed peppers and sausage, sliced carrots, 2 bay leaves, black peppercorns, a spoonful of sweet paprika, and a pinch of chili powder. Simmer for 15 minutes.
- Finish the soup: Add diced potatoes and cook for a short time. Then add a handful of small pasta, season with salt, and cook for an additional 15 minutes, or until the potatoes are tender.
