Gypsy Soup

Let’s make a classic Gypsy Soup!

Ingredients:

  • 400 grams of any type of sausage
  • 600 grams of bell peppers
  • 2 medium carrots
  • 1/2 kg potatoes
  • A handful of small pasta
  • 1 small onion
  • Salt
  • Bay leaf
  • Black peppercorns, sweet paprika, and chili powder
  • Oil

Instructions:

  1. Sauté the base: Slice the sausage and gently fry it in 2 tablespoons of oil. Add finely chopped onion to the browned sausage and sauté together. Then add the bell peppers, sliced into strips, and cook, stirring frequently, for about 5 minutes.
  2. Combine ingredients: Bring 1.5 liters of water to a boil. Add the sautéed peppers and sausage, sliced carrots, 2 bay leaves, black peppercorns, a spoonful of sweet paprika, and a pinch of chili powder. Simmer for 15 minutes.
  3. Finish the soup: Add diced potatoes and cook for a short time. Then add a handful of small pasta, season with salt, and cook for an additional 15 minutes, or until the potatoes are tender.
