Ingredients:
- 500g white fish fillets
- 4 tomatoes
- 1 bell pepper
- 1 onion
- 2 tsp tomato paste
- Rosemary to taste
- Basil to taste
- 5 tbsp olive oil
- 10ml lemon juice
- 3 cloves garlic
- 1 pinch oregano
- 1 tbsp milk
- Salt to taste
- Black pepper to taste
- Dill to taste
Instructions:
- Marinate the fish: Rinse the fish fillets and pat dry. Combine 2 tablespoons of olive oil, lemon juice, oregano, black pepper, and salt. Pour the marinade over the fish and let it marinate for 30 minutes.
- Prepare the tomato sauce: Chop the onion into half-moons, and the bell pepper into strips. Peel and blend the tomatoes.
- Assemble the dish: Grease a baking dish with the remaining olive oil. Spread the tomato puree in the dish, add the chopped vegetables, tomato paste, and milk. Bake in a preheated 200°C (400°F) oven for 15 minutes.
- Bake the fish: Place the marinated fish on top of the tomato sauce. Spoon some of the sauce over the fish.
- Add herbs and garlic: Mince the garlic and sprinkle it over the fish. Garnish with rosemary and basil sprigs. Reduce the oven temperature to 180°C (350°F) and bake for 20 minutes.
- Serve: Garnish with chopped dill and serve with rice or boiled potatoes.
