German-Style Sauerkraut

We suggest making a dish from German cuisine: German-style sauerkraut.

Ingredients:

  • 1 kg shredded cabbage
  • 3 large carrots, grated
  • 1/3 cup white sugar
  • 4 tablespoons fine sea salt

Instructions:

  1. Shred the cabbage into long strips and place it in a large bowl or large plastic container with a lid. Massage the cabbage with your hands for a few minutes until it softens slightly.
  2. Grate the carrots on the large side of the grater. Add the grated carrots to the bowl with the shredded cabbage.
  3. Add sugar and salt to the vegetables and mix the seasoning into the vegetables. Press all the ingredients down with your hands, then place a couple of large cabbage leaves on top.
  4. Place a plate large enough to cover the bowl or container. Put something heavy on the plate to weigh it down. Place the container in a warmer part of the house, where the temperature is around 25°C (77°F).
  5. Check the sauerkraut daily. Three days is usually the ideal time. Once it tastes the way you like, transfer it to a jar and consume within up to 2 months.
