We invite you to prepare Gaucho Sauce – also known as Argentinian sauce, perfect for grilled meats and vegetables.
Ingredients:
- 400 g tomatoes
- 100 ml extra virgin olive oil
- 1-2 tbsp dried oregano (to taste)
- 1 tsp ground cumin
- ½ tsp sweet paprika
- 1 tbsp chopped fresh parsley
- 1-2 garlic cloves
- 1 tbsp wine vinegar or apple cider vinegar (balsamic vinegar is not recommended)
- Salt and ground black pepper, to taste
For flavoring the tomato sauce:
- 1 sprig rosemary
- A few sprigs of fresh thyme
- 1 bay leaf
- 1 tsp sugar (optional, to reduce acidity)
Preparation:
- Place the chopped tomatoes in a saucepan along with the rosemary sprig, bay leaf, and thyme. Heat and simmer until the mixture reduces by half. Taste, and if it’s too acidic, add a teaspoon of sugar.
- Remove the herbs from the tomato sauce and transfer it to a blender. Add oregano, cumin, paprika, minced garlic cloves, and vinegar. Season with salt and pepper, then blend until smooth.
- Once the sauce reaches a uniform consistency, stir in the chopped parsley. While blending, slowly drizzle in the olive oil to emulsify the sauce.
- Taste and adjust seasoning if needed. Let the sauce rest in the refrigerator in an airtight container overnight to develop its full flavor.
