Gaucho Sauce

We invite you to prepare Gaucho Sauce – also known as Argentinian sauce, perfect for grilled meats and vegetables.

Ingredients:

  • 400 g tomatoes
  • 100 ml extra virgin olive oil
  • 1-2 tbsp dried oregano (to taste)
  • 1 tsp ground cumin
  • ½ tsp sweet paprika
  • 1 tbsp chopped fresh parsley
  • 1-2 garlic cloves
  • 1 tbsp wine vinegar or apple cider vinegar (balsamic vinegar is not recommended)
  • Salt and ground black pepper, to taste

For flavoring the tomato sauce:

  • 1 sprig rosemary
  • A few sprigs of fresh thyme
  • 1 bay leaf
  • 1 tsp sugar (optional, to reduce acidity)

Preparation:

  1. Place the chopped tomatoes in a saucepan along with the rosemary sprig, bay leaf, and thyme. Heat and simmer until the mixture reduces by half. Taste, and if it’s too acidic, add a teaspoon of sugar.
  2. Remove the herbs from the tomato sauce and transfer it to a blender. Add oregano, cumin, paprika, minced garlic cloves, and vinegar. Season with salt and pepper, then blend until smooth.
  3. Once the sauce reaches a uniform consistency, stir in the chopped parsley. While blending, slowly drizzle in the olive oil to emulsify the sauce.
  4. Taste and adjust seasoning if needed. Let the sauce rest in the refrigerator in an airtight container overnight to develop its full flavor.
