Frozen Berry Cake: A Taste of Summer, Anytime!

Here’s a fantastic recipe that’s an absolute lifesaver for summer (or any season, really!): a wonderfully moist and tender Frozen Berry Cake featuring luscious strawberries and raspberries. It’s incredibly easy to make, uses simple, affordable ingredients, and because it relies on frozen berries, you can whip it up any time of year! The result is a delightful, soft sponge cake with a bright hint of lemon and bursts of juicy berries throughout. It’s truly perfect with your favorite tea, coffee, or a refreshing glass of compote.

Ingredients:

  • Frozen Strawberries: 300g (about 2 cups)
  • Frozen Raspberries: 200g (about 1 ½ cups)
  • All-Purpose Flour: 200g (about 1 ½ cups)
  • Granulated Sugar: 150g (about ¾ cup)
  • Unsalted Butter: 100g (about ½ cup), melted
  • Eggs: 2
  • Baking Powder: 1 teaspoon
  • Lemon Zest: From one lemon (optional – a tiny squeeze of lemon juice can also be added to the batter for extra zing!)
  • Powdered Sugar: For dusting (optional)

Preparation:

  1. Get Everything Ready

Preheat your oven to 180°C (350°F) so it’s nice and hot when your batter is ready. Grease your baking pan with butter and lightly dust it with flour, or simply line it with parchment paper.

  2. Prep the Berries

Place your frozen strawberries and raspberries in a colander or sieve to allow any excess liquid to drain off. If your strawberries are large, cut them in half. Taking the time to properly drain and dry the berries is important; it prevents them from adding too much moisture to the batter, which keeps your cake from becoming soggy.

  3. Mix the Dry Ingredients

In a large mixing bowl, combine the flour, granulated sugar, and baking powder. Give it a good whisk to ensure everything is evenly distributed.

  4. Prepare the Wet Ingredients

In a separate bowl, lightly beat the eggs. Then, stir in the melted butter (make sure it’s not hot!) and the grated lemon zest. Mix until smooth.

  5. Combine & Create Batter

Pour the wet ingredients into the dry mixture. Stir everything together until you have a smooth, slightly thick batter. Be careful not to overmix – a few small lumps are perfectly fine.

  6. Layer the Cake

Pour about half of your batter into the prepared baking pan and spread it evenly. Scatter the drained berries generously over this first layer of batter. Then, carefully pour the remaining batter over the berries, making sure they are mostly covered.

  7. Bake Away!

Place the pan into your preheated oven and bake for 35–40 minutes. To check for doneness, insert a toothpick into the center of the cake – it should come out clean.

  8. Cool Down

Once baked, take the cake out of the oven and let it sit in the pan for a few minutes. Then, carefully transfer it to a wire rack or serving plate to cool completely. This helps prevent it from getting soggy on the bottom.

  9. Garnish & Serve

Before serving, you can dust the cooled cake with powdered sugar or adorn it with fresh berries for an extra touch of elegance. This cake tastes best at room temperature, ideally enjoyed with a warm cup of tea, coffee, or even a scoop of vanilla ice cream for a truly indulgent treat!

Your delightful Frozen Berry Cake is ready to be savored! Enjoy every bite!

Quick Tip: Don’t be afraid to get creative! This cake is wonderfully versatile, so feel free to experiment with other frozen berries like blueberries, currants, or any other gems you have stashed in your freezer. For an extra boost of flavor, a touch of vanilla extract in the batter works wonders too!
