Friori di Mandorla – Sicilian Almond cookies

We suggest to prepare Friori di Mandorla – Sicilian Almond cookies.

Ingredients:

  • 250g ready-made marzipan
  • 100g sugar
  • 1 egg white
  • Grated zest of lemon or orange
  • Powdered sugar

Instructions:

Homemade marzipan: If you’re making the cookies with homemade marzipan, you’ll need 400g almonds and 200g powdered sugar. Pour boiling water over the almonds and let them sit for a while. Once the water has cooled, peel the almonds. Grind the peeled almonds in a blender until they become a powder. Mix with powdered sugar and add a little water. Knead the marzipan mixture until it becomes smooth and homogeneous.

  1. Mix the marzipan with sugar and egg white. Add a little grated zest of orange or lemon.
  2. Divide the mixture into small portions, roll them in powdered sugar, place them on a baking sheet, and bake in the oven at 180-200°C.
