Fish with Pineapple and Bell Peppers

We invite you to prepare a delightful dish: Fish with Pineapple and Bell Peppers. This recipe is quick to make and sure to win over many fish lovers.

Ingredients:

  • 500 g (1.1 lbs) fish fillet
  • 1 large onion
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 5 slices of canned pineapple
  • ½ cup spicy ketchup
  • Juice of half a lemon
  • ½ cup canned pineapple syrup (or replace with water mixed with 2 tablespoons of honey)
  • Salt, pepper, and chili pepper to taste

Instructions:

  1. Prepare the fish.
    If using frozen fish, fully defrost and pat dry with a paper towel. Season with salt and pepper. Cook the fish in a preheated pan with a tablespoon of oil for 2-3 minutes on each side, or bake in the oven wrapped in aluminum foil or parchment paper at 180°C (356°F) for 20 minutes.
  2. Cool and cut the fish.
    Allow the fish to cool slightly, then cut it into smaller pieces.
  3. Cook the vegetables.
    Slice the onion into quarter-rings, julienne the bell peppers, and dice the pineapple slices. In a pan with a small amount of oil, sauté the onion for 3-4 minutes. Add the bell peppers and cook for another 3 minutes.
  4. Prepare the sauce.
    Add the pineapple to the pan. Mix the ketchup with pineapple syrup, lemon juice, and spices. Pour the mixture over the vegetables and simmer for about 5 minutes.
  5. Assemble the dish.
    In a serving dish or bowl, layer the vegetables with sauce at the bottom, followed by pieces of fish, and then another layer of vegetables.
