Finnish Fish Soup with Leek

We invite you to prepare a Finnish fish soup with leek.

Ingredients:

  • 1 kg cod, ready for cooking,
  • 1 carrot,
  • 1 onion,
  • 20 g fresh dill,
  • 4 potatoes,
  • 1/2 stalk of leek,
  • 400 ml cream,
  • 1 tablespoon flour.

Preparation:

  1. Wash the fish, cut it into 2-3 pieces, place in a pot, and pour 1.5 liters of cold water over it. Bring to a boil and skim off the foam. Peel and wash the carrot.
  2. Add the washed onion (unpeeled), the carrot, and a few sprigs of dill tied together with string to the pot with the fish. Simmer on low heat under a lid for 1 hour. Strain the broth. Separate the fish fillet from the bones and cut it into small pieces.
  3. Wash, peel, and slice the potatoes. Bring the broth to a boil, add the potatoes, and cook for 20 minutes. Wash, dry, and slice the leek into rings, then add it to the soup and cook for 5 minutes.
  4. Wash, dry, and finely chop the remaining dill. Mix the flour with the cream, pour into the soup, bring to a boil, and cook for another 5-7 minutes.
  5. Serve the finished soup by ladling it into bowls. Add some fish fillet to each bowl, sprinkle with dill, and serve. You can also garnish with green onions if desired.
