Let’s prepare a delicious English Lemon Pudding.
Ingredients:
- Zest of 2 lemons
- 110g icing sugar
- 40g flour
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 3 eggs
- 90g unsalted butter, at room temperature
- 60ml lemon juice
- 150ml milk
Instructions:
- Preheat oven to 175°C (350°F). Grease and sugar the baking dishes and set aside.
- In a small bowl, combine the icing sugar and lemon zest. Rub them together with your fingers to release the lemon oils. Sift the flour and salt into the sugar mixture and set aside.
- In a mixer bowl, combine the egg yolks, butter, lemon juice, and milk. Beat until smooth. Reduce the mixer speed to low and gradually add the dry ingredients. Mix until just combined (the batter will be quite runny).
- In a separate bowl, whisk the egg whites until stiff peaks form. Gently fold the egg whites into the batter using a rubber spatula.
- Pour the batter into the prepared baking dishes. Place the dishes in a larger baking pan and add hot water to come about halfway up the sides of the smaller dishes.
- Bake for approximately 35-40 minutes, or until golden brown. Let the puddings cool slightly in the dishes before carefully inverting them onto a serving plate. The pudding can also be served directly from the dishes. Garnish with mint leaves, berries, or other desired toppings.
