Eggs in Lavash with Cheese (Pan-Fried)

Ingredients:

  • Thin lavash – 100 g
  • Eggs – 4 pcs
  • Hard cheese – 100 g
  • Green onion – 10 g
  • Fresh parsley – 10 g
  • Vegetable oil – 1 tbsp
  • Salt, ground black pepper – to taste

Instructions:

  1. Grease the bottom and sides of a pan with vegetable oil. Cut two circular pieces from the lavash—one slightly larger than the pan’s diameter and one slightly smaller. You can use a plate or a round cutter for this. Place the larger piece in the pan and smooth it out.
  2. Crack the eggs one by one into the center, trying to keep them within the lavash borders.
  3. Grate the cheese using a coarse grater. Sprinkle most of it over the raw eggs, leaving some for the topping.
  4. Finely chop the green onion and parsley, then sprinkle them over the cheese layer.
  5. Place the second lavash circle on top and gently press it down around the edges.
  6. Heat the pan over medium heat and cover it with a lid. Cook for 5 minutes, until the bottom turns golden brown, the eggs set, and the cheese melts.
  7. Sprinkle the remaining cheese on top, remove the pan from heat, and let it sit covered for another 5 minutes until the cheese fully melts.
  8. Finely chop more green onion and sprinkle it over the dish before serving.
