We suggest you prepare a winter preserve – Eggplant with a Mushroom Taste in Mayonnaise.
Ingredients:
- Eggplants – 6 kg
- Onion – 2 kg
- Garlic – 3 heads
- Mayonnaise – 0.5 L
- Vinegar 9% – 100 g
- Oil – 300 ml
- Salt, ground pepper
Instructions:
- Cut the eggplants into large cubes and sprinkle with salt, leave for an hour. Then, fry the eggplant in batches, squeezing out the liquid.
- Chop the onion and fry in oil. Combine with the eggplant, salt, pepper, add minced garlic and vinegar. Add mayonnaise and mix well.
- Distribute the salad into sterilized jars and cover with lids. Sterilize for 20 minutes. Seal.
