Eggplant with a Mushroom Taste in Mayonnaise

We suggest you prepare a winter preserve – Eggplant with a Mushroom Taste in Mayonnaise.

Ingredients:

  • Eggplants – 6 kg
  • Onion – 2 kg
  • Garlic – 3 heads
  • Mayonnaise – 0.5 L
  • Vinegar 9% – 100 g
  • Oil – 300 ml
  • Salt, ground pepper

Instructions:

  1. Cut the eggplants into large cubes and sprinkle with salt, leave for an hour. Then, fry the eggplant in batches, squeezing out the liquid.
  2. Chop the onion and fry in oil. Combine with the eggplant, salt, pepper, add minced garlic and vinegar. Add mayonnaise and mix well.
  3. Distribute the salad into sterilized jars and cover with lids. Sterilize for 20 minutes. Seal.
