Easy Banoffee Pie

We invite you to try making a dish from English cuisine, Easy Banoffee Pie. Banoffee is a creamy, indulgent English dessert.

Ingredients:

  • 60 g low-fat margarine
  • 10 pieces of low-fat biscuits (e.g. digestive biscuits)
  • 25 g powdered gelatin
  • 250 g plain quark (soft low-fat cottage cheese)
  • 500 ml yogurt
  • 1 tablespoon sweetener
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • 2 bananas
  • 2 even teaspoons of cocoa powder (or melted chocolate), for decoration

Instructions:

  1. Preheat the oven to 190°C and line a 20 cm diameter baking tin with non-stick parchment paper. Melt the margarine in a non-stick saucepan over low heat.
  2. Meanwhile, place the biscuits in a resealable food bag, crush them into fine crumbs using a rolling pin, and transfer them to a bowl. Add the melted margarine, mix well, and press the mixture into the prepared tin, covering the base evenly. Bake for 12-15 minutes, then set aside to cool.
  3. While the base is baking, dissolve the gelatin in 5 tablespoons of hot water.
  4. Place the quark (cottage cheese) in a bowl and whisk until smooth, then add the yogurt, sweetener, vanilla, and gelatin. Whisk together.
  5. Whisk the egg whites in a bowl until stiff peaks form, then gently fold them into the quark mixture.
  6. Spoon the quark mixture onto the cooled base and smooth the surface. Refrigerate for 4 hours or until set.
  7. Carefully remove the pie from the tin and place it on a serving plate. Slice the bananas thinly and arrange them on top, then sprinkle with cocoa powder or drizzle with melted chocolate. Cut into equal portions to serve.
