Ingredients:
- 40 wonton wrappers (or thin dumpling wrappers)
- 1 lb (500 g) ground pork (8-12% fat content is best)
- 1 tsp salt
- 1 tbsp brown sugar
- 1 tbsp soy sauce
- 6 green onions, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- Water for sealing the wrappers
- Oil for frying

- Chili oil
- Soy sauce
Instructions:
- Prepare the Filling: In a food processor or a large bowl, mix the ground pork with the salt and pulse or stir for about 1 minute until the meat becomes a bit sticky and elastic. This helps the filling hold together.
- Add Flavor: Add the egg, chopped green onions, minced garlic, brown sugar, and soy sauce to the pork. Mix until everything is well combined.
- Shape the Dumplings: Pour a little cold water into a small bowl—you’ll use this to seal the wrappers. Place about 1 teaspoon of the filling in the center of a wonton wrapper. Dip your finger in the water and moisten the edges of the wrapper. Fold the wrapper over the filling and press the edges together to seal. You can create a classic half-moon shape or add decorative pleats. Gently press the bottom of each dumpling to create a flat base so they can stand upright.
- Cook the Dumplings: Heat a skillet with a lid or a Dutch oven with a little oil over medium-high heat. Place half of the dumplings in the pan in a single layer and fry them for 2-3 minutes, or until the bottoms are golden and crispy.
- Steam: Reduce the heat to medium-low, carefully pour about ½ cup (100 ml) of water into the pan, and immediately cover with the lid. Cook for another 2-3 minutes to steam the dumplings through.
