We offer you to prepare East African Rice Pilaf.
Ingredients:
- 2 tablespoons butter
- ½ cup unsalted cashews
- 1 medium onion, chopped
- 1 medium jalapeño pepper, seeded and minced
- 3 cloves garlic, minced
- 2 teaspoons Berbere spice mix
- ½ teaspoon Sicilian sea salt
- 1 cup basmati rice
- 2 medium plum tomatoes, seeded and chopped
- 1 ½ cups chicken broth
- ½ cup unsweetened coconut milk
Preparation:
- Melt the butter in a large skillet over medium heat. Add the cashews; sauté for 2-3 minutes or until golden brown.
- Add the onion, jalapeño, and garlic. Cook for 3 to 4 minutes or until softened. Add the Berbere spice mix, salt, and rice.
- Add the tomatoes, broth, and coconut milk. Bring to a boil. Reduce heat and simmer, covered, for 18-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.
