East African Rice Pilaf

We offer you to prepare East African Rice Pilaf.

Ingredients:

  • 2 tablespoons butter
  • ½ cup unsalted cashews
  • 1 medium onion, chopped
  • 1 medium jalapeño pepper, seeded and minced
  • 3 cloves garlic, minced
  • 2 teaspoons Berbere spice mix
  • ½ teaspoon Sicilian sea salt
  • 1 cup basmati rice
  • 2 medium plum tomatoes, seeded and chopped
  • 1 ½ cups chicken broth
  • ½ cup unsweetened coconut milk

Preparation:

  1. Melt the butter in a large skillet over medium heat. Add the cashews; sauté for 2-3 minutes or until golden brown.
  2. Add the onion, jalapeño, and garlic. Cook for 3 to 4 minutes or until softened. Add the Berbere spice mix, salt, and rice.
  3. Add the tomatoes, broth, and coconut milk. Bring to a boil. Reduce heat and simmer, covered, for 18-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.
