We invite you to prepare delicious Duck Legs with Apples and Red Wine.
Ingredients:
- 4 duck legs
- 1 head of garlic
- Salt and pepper to taste
- 2 carrots
- 1 celery stalk
- 1 sprig of fresh rosemary
- 6 Reinette apples
- Olive oil to taste
- 500 ml red wine
Preparation:
- Season the Duck Legs:
- Clean the duck legs and rub them with garlic, salt, and pepper.
- Prepare the Marinade:
- Slice the carrots and celery into thin strips.
- Add crushed garlic cloves, a sprig of rosemary, and two apples sliced into rounds.
- Combine the vegetables and apples with the duck legs, drizzle with olive oil, and pour in the wine. Let it marinate in a cool place for 12 hours.
- Cook the Duck:
- Remove the duck from the marinade, pat it dry, and sear it in a pan until golden brown.
- Strain the vegetables from the marinade and place them at the bottom of a roasting pan or Dutch oven. Add the seared duck legs and pour the wine over them.
- Cover and bake at 120°C (250°F) for 1.5 hours, occasionally basting the duck with the sauce.
- Add the Apples:
- After 1.5 hours, uncover the dish, add the remaining apples (cut into wedges), and increase the oven temperature to 180°C (350°F).
- Bake for an additional 30 minutes until the apples are tender and the dish is beautifully caramelized.
- Serve:
- Before serving, remove the thigh bones from the duck legs for easier plating.
