Deruny (Potato Pancakes) Stuffed with Cottage Cheese

Ingredients:

For the potato pancakes:

  • 1 kilogram potatoes
  • 1 medium carrot
  • 1 large onion
  • 1 egg
  • 2 tablespoons flour

For the cottage cheese filling:

  • 200 grams cottage cheese
  • 1 large clove garlic
  • Sour cream (to taste)
  • Salt

Instructions:

  1. Prepare the vegetables: Peel the potatoes, carrots, and onion. Grate them on a fine grater. Add the egg, flour, salt, and pepper to the grated vegetables and mix well.
  2. Create the pancakes: Heat some oil in a frying pan over medium heat. Use a spoon to form small patties from the potato mixture and place them in the pan. Add a dollop of cottage cheese filling to the center of each patty, leaving about a centimeter of potato mixture around the edges. Top with another layer of potato mixture.
  3. Cook the pancakes: Cook until golden brown on both sides. Be careful not to flip the pancakes until the bottom side is cooked through.

For the cottage cheese filling: Mash the cottage cheese with a fork. Add the garlic pressed through a garlic press, salt to taste, and 3 tablespoons of sour cream. Mix well. Adjust the amount of sour cream based on the moisture content of your cottage cheese. The filling should have a creamy consistency.
