Ingredients:
For the potato pancakes:
- 1 kilogram potatoes
- 1 medium carrot
- 1 large onion
- 1 egg
- 2 tablespoons flour
- Salt and pepper
For the cottage cheese filling:
- 200 grams cottage cheese
- 1 large clove garlic
- Sour cream (to taste)
- Salt
Instructions:
- Prepare the vegetables: Peel the potatoes, carrots, and onion. Grate them on a fine grater. Add the egg, flour, salt, and pepper to the grated vegetables and mix well.
- Create the pancakes: Heat some oil in a frying pan over medium heat. Use a spoon to form small patties from the potato mixture and place them in the pan. Add a dollop of cottage cheese filling to the center of each patty, leaving about a centimeter of potato mixture around the edges. Top with another layer of potato mixture.
- Cook the pancakes: Cook until golden brown on both sides. Be careful not to flip the pancakes until the bottom side is cooked through.
For the cottage cheese filling: Mash the cottage cheese with a fork. Add the garlic pressed through a garlic press, salt to taste, and 3 tablespoons of sour cream. Mix well. Adjust the amount of sour cream based on the moisture content of your cottage cheese. The filling should have a creamy consistency.
