We suggest making a delicious zucchini cake.
Ingredients:
- 4 small zucchinis
- 2 eggs
- 200 g of mayonnaise
- 100 g of hard cheese
- 2 large carrots
- 2 onions
- Garlic, salt, pepper to taste
- Flour (enough to make a batter similar to pancake dough)
- 2 tomatoes
Preparation:
Wash and peel the zucchinis. Grate them on a coarse grater, season with salt and pepper, and let them sit for a while until they release juice. Then squeeze out the excess liquid, add eggs and flour. Fry the zucchini cakes on a preheated pan with a little oil.
For the filling: Finely chop the onions, grate the carrots on a coarse grater, and sauté until soft. In a separate bowl, mix the mayonnaise with garlic and dill. Grate the cheese in advance. Slice the tomatoes into thin rounds.
While the next zucchini cake is frying, spread a layer of garlic and herb mayonnaise on the cooked one, add the sautéed onions and carrots, lay out the tomato slices, and sprinkle with grated cheese. Cover with a freshly cooked hot cake. Repeat this process with each layer of the cake. The cheese melts from the freshly baked cakes and holds the zucchini cake together.
