Let’s make a classic French dish: Classic homemade Ratatouille.
Ingredients:
- 4 tomatoes
- 2 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 bay leaf
- 1 eggplant
- 1 carrot
- 1 onion
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tbsp parsley
- 1/2 tsp sugar
- 1 clove garlic
- Black pepper
- Basil
- Thyme
- Salt
Instructions:
- Blanch tomatoes: Blanch the tomatoes in boiling water for 30 seconds, peel them, and cut into large pieces.
- Sauté onions and peppers: In a pan, sauté the chopped onion, red and yellow bell peppers until softened. Season with salt and pepper.
- Sauté eggplant: Sauté the eggplant slices until lightly browned. Add to the onion and pepper mixture.
- Add zucchini: Sauté the zucchini slices and add to the other vegetables.
- Create the sauce: Add tomato paste, sugar, bay leaf, thyme, and basil. Stir well.
- Simmer: Add the blanched tomatoes, cover, and simmer for 15 minutes.
- Finish: Remove the bay leaf, thyme, and basil. Stir in minced garlic and parsley.
Your classic homemade ratatouille is ready to serve!
Tip: For the best flavor, use fresh vegetables. Ratatouille is best served fresh, but can be stored for up to a day. If storing, add the tomatoes just before serving.
