Classic homemade Ratatouille

Let’s make a classic French dish: Classic homemade Ratatouille.

Ingredients:

  • 4 tomatoes
  • 2 zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 bay leaf
  • 1 eggplant
  • 1 carrot
  • 1 onion
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tbsp parsley
  • 1/2 tsp sugar
  • 1 clove garlic
  • Black pepper
  • Basil
  • Thyme
  • Salt

Instructions:

  1. Blanch tomatoes: Blanch the tomatoes in boiling water for 30 seconds, peel them, and cut into large pieces.
  2. Sauté onions and peppers: In a pan, sauté the chopped onion, red and yellow bell peppers until softened. Season with salt and pepper.
  3. Sauté eggplant: Sauté the eggplant slices until lightly browned. Add to the onion and pepper mixture.
  4. Add zucchini: Sauté the zucchini slices and add to the other vegetables.
  5. Create the sauce: Add tomato paste, sugar, bay leaf, thyme, and basil. Stir well.
  6. Simmer: Add the blanched tomatoes, cover, and simmer for 15 minutes.
  7. Finish: Remove the bay leaf, thyme, and basil. Stir in minced garlic and parsley.

Your classic homemade ratatouille is ready to serve!

Tip: For the best flavor, use fresh vegetables. Ratatouille is best served fresh, but can be stored for up to a day. If storing, add the tomatoes just before serving.
