Classic Chicken Pot Pie

We invite you to try making a Classic Chicken Pot Pie. This homemade chicken pie is incredibly easy to prepare, making it a great recipe for both beginner cooks and busy families.

Ingredients:

For the pie:

  • 2 sheets of pie dough (400 g)

For the filling:

  • 1/3 cup butter or margarine
  • 1/3 cup chopped onion
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 2 1/2 cups shredded cooked chicken or turkey
  • 2 cups frozen vegetable mix (thawed in advance)

Instructions:

  1. Preheat the oven to 200°C (400°F). Prepare the pie dough sheets using a 20 cm (8-inch) glass pie dish.
  2. In a 2-liter saucepan, melt the butter over medium heat. Add the chopped onion and cook for 2 minutes, stirring frequently, until softened. Stir in the flour, salt, and pepper until well combined. Gradually add the broth and milk, cooking and stirring until the mixture becomes bubbly and thickened.
  3. Add the cooked chicken and vegetable mix to the saucepan. Remove from heat. Spoon the chicken mixture into the pie dish lined with one sheet of dough. Cover with the second sheet, sealing the edges. Make several slits in the top crust to allow steam to escape.
  4. Bake for 30 to 40 minutes, or until the crust is golden brown. During the last 15–20 minutes of baking, cover the edges of the crust with foil strips to prevent over-browning. Let the pie rest for 5 minutes before serving.
