We suggest preparing Classic Bulgarian Tarator Soup. Tarator is a Balkan cold soup, usually enjoyed during warm summer months. It’s delicious, light, and easy to make.
The best thing about tarator is that it’s made with yogurt, making it a probiotic! Tarator can be enjoyed as a standalone dish, as an appetizer with beef cuts, salami, and any other meat, or even as a drink.
Ingredients:
- 2 cups of yogurt
- 2 cucumbers
- Salt to taste
- 2 tablespoons of oil
- A pinch of chopped dill
- A clove of garlic (minced)
- A cup of chopped walnuts (optional)
- Tarator spice mix (optional)
Preparation:
- Dice the cucumbers (or you can grate them, but diced cucumbers make Tarator tastier).
- Combine the yogurt, cucumbers, oil, garlic, dill, and salt.
- Stir gently until smooth.
- Add two cups of water (the same amount as yogurt), stirring constantly to mix everything well.
- Garnish with walnuts.
