Chocolate Sandwich Cookies – a classic treat with a homemade touch, these chocolate cookies are filled with a creamy frosting.
Ingredients (18 pieces):
For the cookies:
- 250g all-purpose flour
- 3 tablespoons unsweetened cocoa powder
- ½ teaspoon baking powder
- Pinch of salt
- 225g unsalted butter, softened
- 180g granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
For the frosting:
- 225g cream cheese, softened
- 100g unsalted butter, softened
- 250g powdered sugar
Instructions:
- Prep the cookies: Whisk together the flour, cocoa powder, baking powder, and salt. Cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla. Gradually add the dry ingredients and mix until just combined. Form the dough into a log, wrap in plastic wrap, and refrigerate for at least 1 hour or overnight.
- Bake the cookies: Preheat oven to 160°C (325°F) with convection or 175°C (350°F) without convection. Roll out the chilled dough to ¼ inch thickness and cut into rounds. Place on a baking sheet lined with parchment paper and refrigerate for 10 minutes. Bake for 10 minutes. Let cool completely.
- Make the frosting: Beat the cream cheese and butter until light and fluffy. Gradually add the powdered sugar and beat until smooth. If the frosting is too thick, add a splash of milk.
- Assemble the cookies: Spread a generous amount of frosting onto one cookie and sandwich it with another.
