Chocolate Carrot Cake

We suggest you make a Chocolate Carrot Cake.

Ingredients:

For the carrot cake:

  • 200 g wheat flour
  • 250 g carrots
  • 4 eggs
  • 200 g sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp caraway powder
  • 100 ml olive oil

For the chocolate glaze:

  • 200 g chocolate
  • 100 ml cream
  • 50 ml olive oil

Preparation:

Carrot cake:

  1. Turn on the oven to a temperature of 200ºС (390ºF) to heat it up while we make the dough.

  2. Mix the wheat flour with the baking powder, cinnamon and caraway in a bowl. Sift everything together and set aside.

  3. Put the eggs in a bowl with the sugar and beat until a foamy mixture is obtained.

  4. Peel the carrots, grate them or chop them finely and add them to the previous mixture along with the olive oil. Beat everything together well.

  5. Without stopping mixing, gradually add the dry ingredients until they are completely combined, forming a fairly liquid homogeneous mass.

  6. Next, grease the mold with a small amount of olive oil, then sprinkle with flour on top, remove excess flour by tapping the bottom up.

  7. Pour the dough for the carrot cake into the mold. Place the mold with the dough in the oven, in which the temperature has been lowered to 180º (350ºF), and leave the cake for about 40 minutes. To make sure that the carrot cake is ready, pierce its center with a toothpick and if it comes out clean, the cake is ready.

  8. Then remove the cake from the oven and wait until it cools down a bit before removing it from the mold. Let it cool completely on metal grids.

Chocolate glaze:

While the carrot cake is cooling, let’s start making the chocolate glaze. Put the cream in a saucepan on the heat and while it is heating up, break the chocolate into pieces and put them in a bowl. When the cream starts to boil, pour it into the chocolate and stir until a homogeneous mass is obtained. Add the olive oil, which will give the glaze a special shade, and mix well.

When the carrot cake has cooled down, put it on a plate and pour the chocolate glaze over the cake. You don’t have to cover it completely.
