We offer a recipe for a French dish, Chicken Breast with Fried Mushrooms.
Ingredients:
- 1½ teaspoons olive oil
- 4 boneless, skinless chicken breasts
- 4 medium shallots, chopped
- 4 garlic cloves, minced
- 500 g of sliced mushrooms
- 1 tablespoon chopped fresh rosemary (or 2 tablespoons dried rosemary)
- 2 tablespoons dry sherry (optional)
- ½ cup low-sodium chicken broth
- Sea salt (or Himalayan salt) and freshly ground black pepper (to taste, optional)
Instructions:
- Heat 1 teaspoon of olive oil in a medium skillet over medium heat. Add the chicken breasts and cook for 3 minutes on each side. Remove from the pan and keep warm.
- Heat ½ teaspoon of olive oil over medium heat. Add the shallots and cook, stirring often, for 3-4 minutes, until they become translucent.
- Add the garlic and cook, stirring frequently, for 1 minute.
- Add the mushrooms and rosemary. Cook, stirring occasionally, for 10 minutes or until the mushrooms release their liquid.
- Add the sherry (if desired) and broth. Season with salt and pepper to taste. Cook, stirring occasionally, for 10 minutes.
- Add the chicken breasts back to the pan. Cook for 5 minutes or until the chicken is fully cooked inside.
- Place the chicken breasts on each of the four serving plates. Top with the mushroom mixture.
