Chicken Breast with Fried Mushrooms

We offer a recipe for a French dish, Chicken Breast with Fried Mushrooms.

Ingredients:

  • 1½ teaspoons olive oil
  • 4 boneless, skinless chicken breasts
  • 4 medium shallots, chopped
  • 4 garlic cloves, minced
  • 500 g of sliced mushrooms
  • 1 tablespoon chopped fresh rosemary (or 2 tablespoons dried rosemary)
  • 2 tablespoons dry sherry (optional)
  • ½ cup low-sodium chicken broth
  • Sea salt (or Himalayan salt) and freshly ground black pepper (to taste, optional)

Instructions:

  1. Heat 1 teaspoon of olive oil in a medium skillet over medium heat. Add the chicken breasts and cook for 3 minutes on each side. Remove from the pan and keep warm.
  2. Heat ½ teaspoon of olive oil over medium heat. Add the shallots and cook, stirring often, for 3-4 minutes, until they become translucent.
  3. Add the garlic and cook, stirring frequently, for 1 minute.
  4. Add the mushrooms and rosemary. Cook, stirring occasionally, for 10 minutes or until the mushrooms release their liquid.
  5. Add the sherry (if desired) and broth. Season with salt and pepper to taste. Cook, stirring occasionally, for 10 minutes.
  6. Add the chicken breasts back to the pan. Cook for 5 minutes or until the chicken is fully cooked inside.
  7. Place the chicken breasts on each of the four serving plates. Top with the mushroom mixture.
