Cheese Cookies

Let’s prepare some delicious Cheese Cookies!

Ingredients:

  • Butter – 130 g (cold)
  • All-purpose flour – 180 g
  • Egg – 1 pc
  • Salt – ¼ tsp
  • Hard cheese – 100 g (grated)
  • Egg yolk – 1 pc

Instructions:

  1. Prepare the dough:
    • Cut the cold butter into small cubes. Sift the flour into a bowl and add a pinch of salt. Using a blender, combine the butter and flour into a crumbly texture. Add the egg and mix thoroughly.
  2. Incorporate the cheese:
    • Add the grated cheese to the mixture and knead the dough quickly to prevent the butter from melting from the warmth of your hands. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes to 1 hour.
  3. Shape the cookies:
    • Roll out the dough to a thickness of 0.5 cm (about ¼ inch). Cut out circles or any shapes you prefer.
  4. Prepare for baking:
    • Place the cookies on a baking sheet lined with parchment paper. Mix the egg yolk with a teaspoon of water and brush it over the cookies. Optionally, sprinkle sesame seeds on top.
  5. Bake the cookies:
    • Prick the cookies in several places with a fork. Bake in a preheated oven at 180°C (356°F) for 12–15 minutes until golden.
