Cauliflower and Bacon Salad

This cauliflower and bacon salad is a hearty and flavorful dish. The sweetness of the roasted cauliflower pairs perfectly with the salty crunch of bacon.

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 6 slices of bacon
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1.5 cups shredded cheddar cheese
  • 2-3 tbsp chopped green onion

Instructions:

  1. In a large skillet, bring 1/2 cup of water to a boil. Add cauliflower, cover, and steam until tender, about 4 minutes. Drain and let cool while you prepare the other ingredients.
  2. In a large skillet over medium heat, cook bacon until crispy, about 3 minutes per side. Drain on paper towels, then crumble.
  3. In a large bowl, whisk together sour cream, mayonnaise, lemon juice, and garlic powder. Add cauliflower and toss to coat. Season with salt and pepper. Stir in bacon, cheddar cheese, and green onion.
  4. Serve warm or at room temperature.
