Broccoli salad with feta cheese and garlic sauce

This light, garlicky salad with crunchy sunflower seeds is slightly sweet from the canned corn and salty from the cheese. It’s perfect for dinner, parties, or barbecues. You can serve it on its own or with grilled meat or sausage.

Ingredients (for 5 servings):

  • 1 broccoli – 500g
  • Feta cheese – 200g
  • Sunflower seeds – 60g
  • Canned corn – about 150g
  • Natural Greek yogurt or other natural cream yogurt – 500ml
  • Garlic cloves – 2-3 pcs
  • Salt, pepper

Instructions:

  1. Rinse the broccoli under running water and divide into florets. Place in salted, boiling water and cook (about 4 minutes). Drain thoroughly.
  2. Toast the sunflower seeds in a dry pan until lightly browned. Let cool.
  3. Remove the cheese from the brine and cut into cubes.
  4. Prepare the garlic sauce. Peel and mince the garlic and mix with yogurt. Season with salt and pepper to taste.
  5. In a large glass bowl or salad bowls, layer half of the broccoli, corn, feta cheese, garlic sauce, and sunflower seeds. Top with the remaining ingredients.
  6. You can chill the salad in the refrigerator or serve it immediately.
