Beijinhos – Brazilian Coconut Sweets

Ingredients:

  • 400 g sweetened condensed milk
  • 1 cup sweetened shredded coconut (plus extra for coating)
  • 1 tbsp unsalted butter, softened
  • 1 tbsp vanilla extract
  • Whole cloves for decoration

Instructions:

  1. Prepare the Mixture:
    • Grease a large, flat plate with butter. In a non-stick saucepan, combine condensed milk, shredded coconut, and butter.
    • Cook over medium heat, stirring constantly, until the mixture thickens enough to pull away from the sides of the pan, leaving the bottom clean when scraped with a wooden spoon (about 7 minutes).
  2. Add Flavor and Cool:
    • Remove the mixture from heat and stir in the vanilla extract. Transfer it to the greased plate and allow it to cool to room temperature.
  3. Shape the Sweets:
    • With buttered hands, roll the mixture into small balls, using a dessert spoon to measure out each portion. Roll each ball in shredded coconut until fully coated.
  4. Decorate:
    • Place the balls into small candy cups and insert a whole clove into the center of each as a decorative touch. Remember, the cloves are for decoration only and should be removed before eating!
  5. Chill and Serve:
    • For warm weather, refrigerate the mixture for an hour before shaping to help it hold its form.
