Barley Muffins with Beef Meatballs and Corn Sauce

Ingredients:

For the meatballs:

  • 500g ground beef
  • 250g mushrooms
  • 10 tablespoons canned corn
  • 100g pearl barley (weight before cooking)

  • 1 large egg
  • 1 large clove garlic
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon marjoram
  • Salt and pepper to taste

For the muffins:

  • 1 cup flour
  • 3/4 cup milk
  • 200g 30% cream
  • 1 large egg
  • 3 tablespoons grated cheese
  • 1 tablespoon chopped parsley
  • 1 tablespoon black cumin
  • Salt and pepper to taste

For the corn sauce:

  • 1 teaspoon chili powder
  • 1/2 teaspoon lemon juice
  • 4 tablespoons plain yogurt

For garnish:

  • Fresh parsley

Instructions:

Meatballs: Combine the beef, egg, 3-4 tablespoons of cooked and cooled barley, tomato paste, spices, and breadcrumbs in a bowl. Mix until well combined, adding more breadcrumbs if needed to form firm balls. Shape the mixture into meatballs.

Muffins: In a bowl, combine the barley, mushrooms, egg, grated cheese, cream, spices, milk, and flour. Mix well. Place the mixture into muffin tins, placing a meatball in the center of each, and cover with the remaining mixture. Bake at 180°C (350°F) for approximately 35-40 minutes. Let cool slightly in the tins before serving.

Corn Sauce: Blend the corn, yogurt, lemon juice, and chili powder in a blender until smooth.

To serve: Top the barley muffins with the beef meatballs and corn sauce. Garnish with fresh parsley. Serve hot or cold.
