Banana and Cookie Crumble Parfait (Verrine)

Looking for a simple, satisfying treat? This Banana and Cookie Crumble Parfait (Verrine) is a light, no-bake dessert served in a glass, combining creamy smoothness with a delightful crunch. It’s made with everyday ingredients, requires zero baking, and is perfect for a quick family snack or an elegant addition to a dinner party.

Ingredients (Per Serving):

  • ½ ripe banana

  • ½ cup plain, low-fat soft cheese (like fromage blanc, quark, or thick Greek yogurt)

  • A few drops of lemon juice

  • 1 crispy cookie (Speculoos, oatmeal, or a standard shortbread cookie works well)

  • Optional: A sprig of mint or a drizzle of caramel sauce for garnish.

Instructions:

  1. Prepare the Banana Layer

    • Peel and prepare the banana.

    • Mash it thoroughly with a fork or blend it into a smooth puree.

    • Stir in a few drops of lemon juice. This prevents the banana from browning and helps brighten its flavor.

  2. Assemble the Verrine

    • Layer the banana puree at the bottom of a clear glass or small jar.

    • Carefully spoon the soft cheese or thick yogurt over the banana layer.

  3. Prepare the Crumble

    • Place the cookie in a small bag and crush it thoroughly with a spoon or a rolling pin until coarse crumbs are formed.

  4. Garnish and Serve

    • Just before serving, sprinkle the crunchy cookie crumbs generously over the surface of the dessert.

    • Optionally, finish with a sprig of fresh mint or a small spoonful of caramel for an extra touch of indulgence.

Your delicious, layered banana parfait is ready. Enjoy!
