We suggest making Balsamic Mushrooms – a hearty side dish.
Ingredients:
- 0.5 kg fresh mushrooms, sliced
- 2 tbsp balsamic vinegar
- 1 large or 2 small onions, finely diced
- 1 tbsp olive oil
- 3 tbsp unsalted butter
- 0.5 tsp salt
- 1/4 tsp freshly ground black pepper
- 1.5 tsp finely chopped fresh rosemary or thyme
- 1.5 tbsp dark brown sugar
- 1 tbsp soy sauce
- 3 cloves green garlic, finely chopped or grated
Instructions:
- Heat olive oil in a skillet until shimmering. Add the onions and cook until translucent.
- Stir in 2 tablespoons of butter until melted.
- Add the sliced mushrooms, salt, pepper, and rosemary or thyme. Cook, stirring frequently, until browned, about 3-4 minutes.
- Reduce heat, add balsamic vinegar, brown sugar, soy sauce, and green garlic. Cook, stirring occasionally, until mushrooms are tender and reduced in volume, about 6-8 minutes.
- Stir in the remaining tablespoon of butter until melted and coats the mushrooms. Cook for about 1 minute until the sauce lightens slightly.
- Serve immediately.
