Balsamic Mushrooms – a hearty side dish

We suggest making Balsamic Mushrooms – a hearty side dish.

Ingredients:

  • 0.5 kg fresh mushrooms, sliced
  • 2 tbsp balsamic vinegar
  • 1 large or 2 small onions, finely diced
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 0.5 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1.5 tsp finely chopped fresh rosemary or thyme
  • 1.5 tbsp dark brown sugar
  • 1 tbsp soy sauce
  • 3 cloves green garlic, finely chopped or grated

Instructions:

  1. Heat olive oil in a skillet until shimmering. Add the onions and cook until translucent.
  2. Stir in 2 tablespoons of butter until melted.
  3. Add the sliced mushrooms, salt, pepper, and rosemary or thyme. Cook, stirring frequently, until browned, about 3-4 minutes.
  4. Reduce heat, add balsamic vinegar, brown sugar, soy sauce, and green garlic. Cook, stirring occasionally, until mushrooms are tender and reduced in volume, about 6-8 minutes.
  5. Stir in the remaining tablespoon of butter until melted and coats the mushrooms. Cook for about 1 minute until the sauce lightens slightly.
  6. Serve immediately.
