Baked Rabbit with Rice

We invite you to try making Baked Rabbit with Rice.

Ingredients:

  • Rabbit – 500 g
  • Rice – 150 g
  • Carrot – 1 piece
  • Onion – 1 piece
  • Tomato – 1/2 piece
  • Paprika – 1 tsp
  • Turmeric – 1 tsp
  • Salt

Ingredients for Marinade:

  • Oil – 100 ml
  • Balsamic vinegar (4%) – 2 tbsp
  • Garlic – 2 cloves
  • Onion – 1 piece
  • Chili pepper – 1 piece
  • Bay leaves – 2 pieces
  • Tarragon – 1 tsp
  • Mint – 1 tsp
  • Cloves – 3 pieces
  • Mixed peppercorns
  • Salt

Preparation:

To Prepare the Marinade:

  1. Slice the onion into half rings and the chili pepper into circles.
  2. Place bay leaves, peppercorns, and cloves in warm water to release their aromas.
  3. Mix the oil and balsamic vinegar, then add the chili, onion, minced garlic, tarragon, and mint. Basil, rosemary, or Provençal herbs can also be used. Add the spiced water to the marinade.
  4. Submerge the rabbit meat in the marinade and let it sit for 2 hours.

To Prepare the Dish:

  1. Slice the onion into thin half-rings and grate the carrot. Sauté the vegetables in oil for 5 minutes.
  2. Rinse the rice thoroughly and add it to the vegetables in the skillet. Add the paprika, turmeric, and salt, mixing well so each grain is coated with spices.
  3. Cook the rice until it is half done, using a water-to-rice ratio of 1:1, until all the water is absorbed.
  4. Place the marinated rabbit in a glass baking dish. Layer the rice and vegetables on top and add the diced tomato. Pour the remaining marinade over the dish. Cover and bake at 180°C (350°F) for 40–50 minutes, until all the liquid is absorbed.
