Baked potatoes with vegetable mix in the oven

We suggest making baked potatoes with vegetable mix in the oven.

Ingredients:

  • Large potatoes – 6 pcs
  • Frozen vegetable mix of your choice – 300 g
  • Onion
  • Garlic
  • Mayonnaise – about 3 tablespoons
  • Spices – rosemary, basil, marjoram, pepper
  • Salt – to taste

Preparation:

  1. Peel the potatoes, wash them, and slice them into small rounds. For the sauce, mix the chosen spices with mayonnaise, crush the garlic, and season with red and black pepper. Pour this sauce over the potato slices and mix well. Let it sit for 20 minutes.
  2. Meanwhile, peel the onion and slice it into half rings. Heat a pan with some oil and lightly fry the onion. Then, add the frozen vegetables and sauté for a few minutes, stirring occasionally.
  3. Prepare a baking dish and grease it with oil. Place half of the potato slices, along with the sauce, on the bottom of the dish. Layer the sautéed vegetables on top, then cover with the remaining potato slices. Preheat the oven to 190°C (375°F) and bake for 40 minutes until fully cooked.
