Baked Potatoes with Chicken and Cheese

Ingredients:

  • 1 kg (2.2 lbs) potatoes
  • 400 g (14 oz) chicken breast
  • 400 ml (1 ⅔ cups) white sauce (such as béchamel)
  • 10 g (2 tsp) chopped green onions
  • 200 g (7 oz) shredded mozzarella
  • 50 g (2 oz) grated Parmesan

Instructions:

  1. Boil the potatoes until they are just tender but still firm inside.
  2. Let them cool slightly, then cut out a small hollow in each one.
  3. Boil the chicken breast with a pinch of salt, shred it into pieces, and set aside.
  4. Scoop out a little of the potato flesh from each potato to create a deeper well.
  5. Mix the shredded chicken with mozzarella and white sauce.
  6. Fill each potato with the mixture and sprinkle with grated Parmesan.
  7. Bake at 170°C (340°F) for about 10 minutes, until golden and bubbly.
  8. Garnish with chopped green onions before serving.
