Ingredients (Serves 4):

  • 1.3 lbs (600g) pork loin or tenderloin
  • 8 oz (250g) button mushrooms
  • 1 clove garlic, minced
  • ½ red bell pepper, diced
  • 2 tbsp olive oil
  • Salt, black pepper, and paprika to taste
  • 1 tbsp chopped fresh parsley
  • 1 onion, diced
  • ⅓ cup (100ml) dry white wine
  • ⅓ cup (100ml) chicken or vegetable broth
  • ¾ cup (200ml) heavy cream
  • A little cornstarch or flour for thickening (optional)
  • 5 oz (150g) bacon, diced

Instructions:

  1. Prep the Meat: Trim any silver skin from the pork loin. Pat it dry, then rub it generously with salt, pepper, and paprika.
  2. Prep the Veggies: Clean and slice the mushrooms. Dice the bell pepper and onion, and mince the garlic.
  3. Sear the Pork: In a heavy, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Sear the pork on all sides until it has a nice golden crust. Remove the pork from the pan and set it aside.
  4. Cook the Sauce Base: In the same pan, add the diced bacon and cook until crispy. Add the mushrooms, bell pepper, onion, and garlic. Sauté for a few minutes until the vegetables are soft.
  5. Build the Sauce: Pour in the white wine and broth, scraping up any browned bits from the bottom of the pan. Bring it to a simmer, then stir in the heavy cream. Taste the sauce and adjust seasonings as needed.
  6. Bake: Return the pork to the pan, nestling it into the sauce. Cover the pan and bake at 350°F (180°C) for about 25 minutes, or until the pork is cooked through.
  7. Serve: Remove the pork from the pan and let it rest for a few minutes before slicing. If the sauce is too thin, you can thicken it with a little cornstarch or flour mixed with water. Stir in the fresh parsley. Serve the sliced pork topped with the warm mushroom sauce.

What to Serve with It:
