Baked Pike in White Wine

Ingredients:

  • 1.5 kg (3.3 lbs) whole pike, cleaned
  • 600 g (1.3 lbs) baby potatoes
  • 2 red onions
  • 2 red bell peppers
  • 300 ml (1 ¼ cups) fish broth
  • 200 ml (¾ cup) dry white wine
  • Olive oil (for drizzling)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Peel the potatoes, leaving small ones whole and cutting larger ones in half. Slice the bell peppers into thin strips and chop the onions into chunks. Arrange everything in a baking dish, season with salt and pepper, and pour over the wine and fish broth.
  2. Season the pike with salt and pepper, then place it on top of the vegetables. Drizzle with olive oil and bake in a preheated oven at 180°C (350°F) for about 35 minutes, or until the potatoes are tender and the fish is cooked through. While baking, spoon the juices from the dish over the fish 2–3 times to keep it moist.
  3. Serve hot, garnished with freshly chopped parsley.
