Looking for a simple, satisfying, and healthy meal that practically makes itself? This Baked Feta and Egg Tortilla Wrap is a lifesaver for busy weekdays or unexpected guests! It features a tender, aromatic baked filling with a hint of Mediterranean flair, all conveniently wrapped in a soft tortilla, making it perfect for on-the-go enjoyment.
Cooked without frying and ready in just 20 minutes in the oven, this high-protein dish can easily be complemented with fresh vegetables, herbs, or even tucked into a pita or baguette.
Ingredients:
- 100g (about 3.5 oz) feta cheese (or brined cheese like halloumi or goat cheese)
- 6 large eggs
- 1 tbsp olive oil (or sunflower oil, if preferred, for greasing)
- Pinch of salt
- Pinch of ground black pepper
- 2 wheat tortillas (you can also use large lavash bread, pita bread, or even a fresh baguette)
- Fresh basil, oregano, or mint, to taste (optional)
Preparation:
- Preheat & Prep: Preheat your oven to 200°C (400°F). Lightly grease a baking dish (make sure to oil the sides too!).
- Assemble for Baking: Place the block or crumbled feta cheese in the center of the prepared baking dish. Carefully crack the eggs directly over and around the feta.
- Season & Drizzle: Season generously with salt and pepper, then drizzle with a good amount of olive oil.
- Bake to Perfection: Bake for 18–22 minutes. You want the egg yolks to remain slightly runny or just set, and the feta should be soft and wonderfully aromatic.
- Create the Filling: Remove the dish from the oven. While still hot, gently mash the baked feta and eggs with a fork until they form a tender, cohesive filling.
- Warm the Tortillas: Lightly warm the tortillas (or lavash/pita) in a dry pan or microwave for a few seconds to make them more pliable.
- Fill & Garnish: Spoon 3–4 tablespoons of the warm filling onto each tortilla. If desired, sprinkle with fresh basil, oregano, or mint.
- Wrap It Up: Fold the tortilla tightly into a wrap or burrito shape, ensuring the filling is secure.
Your Baked Feta and Egg Tortilla Wraps are ready! Enjoy!
