Ingredients:
- about 500 g chicken breast
- 3 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1 teaspoon of minced garlic
- ground pepper and sea salt for seasoning
Tomato Balsamic Sauce:
- 0.5 l can of canned peeled, diced tomatoes
- 1/2 red onion, sliced or diced
- 3 cloves of garlic, chopped
- 2-3 tablespoons of balsamic sauce
- 1 tablespoon of brown sugar (to taste)
- salt and pepper to taste
And also:
- grated mozzarella
- chopped parsley or dill
Cooking:
- Preheat the oven to 220 degrees.
- Rub the chicken fillet with olive oil, herbs and spices.
- Pour the canned tomatoes into a baking dish, add garlic, onion, balsamic sauce, brown sugar, salt and pepper – mix.
- Then place the chicken fillet on top of the tomato balsamic sauce. Place in the oven and, depending on the thickness of the fillet, bake for 20-25 minutes.
- After this time, sprinkle the chicken generously with grated mozzarella cheese and bake for another 4 minutes, until the cheese melts and is slightly baked to a golden crust.
- Sprinkle the finished dish with fillet with chopped parsley or dill.
