Baked Chicken Fillet with Mozzarella Cheese

Ingredients:

  • about 500 g chicken breast
  • 3 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1 teaspoon of minced garlic
  • ground pepper and sea salt for seasoning

Tomato Balsamic Sauce:

  • 0.5 l can of canned peeled, diced tomatoes
  • 1/2 red onion, sliced or diced
  • 3 cloves of garlic, chopped
  • 2-3 tablespoons of balsamic sauce
  • 1 tablespoon of brown sugar (to taste)
  • salt and pepper to taste

And also:

  • grated mozzarella
  • chopped parsley or dill

Cooking:

  1. Preheat the oven to 220 degrees.
  2. Rub the chicken fillet with olive oil, herbs and spices.
  3. Pour the canned tomatoes into a baking dish, add garlic, onion, balsamic sauce, brown sugar, salt and pepper – mix.
  4. Then place the chicken fillet on top of the tomato balsamic sauce. Place in the oven and, depending on the thickness of the fillet, bake for 20-25 minutes.
  5. After this time, sprinkle the chicken generously with grated mozzarella cheese and bake for another 4 minutes, until the cheese melts and is slightly baked to a golden crust.
  6. Sprinkle the finished dish with fillet with chopped parsley or dill.
