Bagels with Scrambled Eggs and Smoked Salmon

Ingredients:

  • 6 eggs (room temperature)
  • 1/3 cup milk
  • 2 tbsp finely chopped green onion
  • 4 fresh, soft bagels, halved
  • 2 tbsp butter, diced
  • 1/3 cup light cream cheese
  • 100 g sliced smoked salmon
  • Lemon wedges, for serving

Preparation:

  1. In a bowl, whisk together eggs, milk, and green onion until fully combined. Let the mixture sit for a few minutes to allow the foam to settle. Meanwhile, toast the bagels to your desired crispness.
  2. Heat a medium non-stick skillet over medium heat. Add butter, let it melt, and swirl to coat the bottom.
  3. Pour in the egg mixture and cook without stirring for 30 seconds. Using a wide spatula, gently push the eggs from the edges toward the center while tilting the skillet side to side, allowing the uncooked eggs to flow freely. Continue this every 15 seconds until soft folds form and about one-quarter of the mixture remains slightly runny. Remove from heat and gently stir the eggs one last time to create a soft omelet-like texture.
  4. Spread cream cheese over the toasted bagel halves. Top with smoked salmon and scrambled eggs. Season to taste and serve with lemon wedges.
