Backhendl: A Viennese Classic

Let’s prepare a traditional Viennese dish – Backhendl. Backhendl is a classic Viennese dish dating back to the 18th century and was considered an aristocratic dish.

Ingredients:

  • 1 whole chicken
  • 1 lemon
  • 8 tablespoons flour
  • 3 eggs
  • Breadcrumbs
  • 200g butter
  • Black pepper
  • Salt

Instructions:

  1. Take a whole prepared chicken, rub it with salt, black pepper, and a little freshly squeezed lemon juice. Let it sit for about 20 minutes.
  2. Cut the chicken into four portions, separating the wings.
  3. Dip the portioned pieces in flour, then in beaten eggs, and then in breadcrumbs.
  4. Fry the pieces of chicken in a large amount of melted butter. Ideally, use a deep fryer, but you can also fry in a pan, covering it with a lid.

Backhendl is ready! Serve with parsley, a slice of lemon, and a side of green salad or potato salad. Enjoy!
