“Autumn” salad with chicken, mushrooms, and pickled cucumbers

We suggest preparing the “Autumn” salad with chicken, mushrooms, and pickled cucumbers.

Ingredients:

  • Chicken meat – 400 g
  • Canned corn – 250 g
  • Eggs – 3
  • Mushrooms (champignons) – 250 g
  • Onions – 2
  • Pickled cucumbers – 4
  • Boiled carrots – 2
  • Garlic – 3 cloves
  • Dill – ½ bunch
  • Parsley – ½ bunch
  • Mayonnaise (67%) – 370 g
  • Olive oil
  • Pepper
  • Salt

Preparation:

  1. Cut the boiled chicken meat into cubes.
  2. Slice the mushrooms into thin slices, chop the onions and cucumbers into small cubes, grate the carrots and eggs coarsely, drain the corn, finely chop the greens, and press the garlic through a garlic press.
  3. Sauté the onions, mushrooms, and carrots separately in olive oil until golden. Add salt and pepper to taste.
  4. For the dressing, mix the garlic, greens, and mayonnaise, and whisk slightly with a fork until creamy.
  5. On a serving dish, layer the ingredients in the following order: chicken + cucumbers + mushrooms + carrots + onions + carrots + cucumbers + chicken + corn + eggs.
  6. Generously spread the top with the mayonnaise mixture, garnish with greens and corn. Decorate the sides with mushroom slices and serve immediately.
