This creamy and aromatic wild mushroom soup, made with fresh wild mushrooms, is a perfect, comforting choice for a family lunch or dinner. Ingredients:
- 1 lb (500 g) fresh wild mushrooms (like Porcini/Ceps, Boletes, or Slippery Jack/Suillus)
- 5–6 medium potatoes
- 1–2 carrots
- 1 onion
- 1 bay leaf
- 3 whole allspice berries
- 3 whole black peppercorns
- 1 tbsp butter
- Salt and spices to taste
- 2–3 sprigs of fresh dill or parsley
- Sour cream for serving
Instructions:
- Prep the Vegetables: Peel and dice the potatoes into small cubes. Grate the carrots coarsely. Finely chop the onion.
- Start the Broth: Pour about 2 quarts (2 liters) of water into a large pot and bring it to a boil. Add the potatoes, carrots, bay leaf, allspice, black peppercorns, and a pinch of salt. Cook over medium heat until the vegetables are tender.
- Sauté the Mushrooms: Slice the mushrooms (leave small ones whole). In a separate skillet, melt the butter and sauté the mushrooms until they are golden brown. Then, add the chopped onion and continue to sauté for a few more minutes until the onion is soft and fragrant.
- Combine: Once the potatoes are soft, add the sautéed mushrooms and onion mixture to the pot. Stir, bring the soup back to a boil, and let it simmer for another 3–5 minutes to allow the flavors to meld.
