Albondigas – Spanish Meatballs in Sauce

We offer to cook Albondigas – Spanish meatballs in sauce. As the etymology of the word suggests, Albondigas is a recipe of Arab origin that has been passed down for centuries (Arabic al-bunduqa – “ball”).

Ingredients:

For the meatballs:

  • 500 grams of ground beef
  • 250 grams of ground pork
  • 1 clove of garlic
  • chopped parsley
  • salt
  • pepper
  • 1 egg yolk
  • 3 tablespoons of breadcrumbs
  • flour
  • 4 tablespoons of milk

For the sauce:

  • 2 tablespoons of olive oil
  • 1 small onion
  • 1 clove of garlic
  • 1 tablespoon of flour
  • 1 glass of white wine
  • 2 ladles of broth
  • 1 bay leaf
  • salt

Preparation:

  1. Chop the onion and garlic clove.
  2. In a large bowl, mix the minced meat with milk, egg yolk, breadcrumbs, chopped onion, parsley, salt and pepper. Let it sit for about ten minutes.
  3. Form small balls (the size of a ping-pong ball) from the resulting mixture, roll them in flour and fry over medium heat until golden brown (they should not be overcooked).
  4. Leave the meatballs in the pan.
  5. In another pan, fry the garlic cloves and onion in oil. When the onion is sautéed, add a tablespoon of flour and stir a little. Add a glass of wine and two ladles of broth.
  6. Add the bay leaf, salt and pepper to taste, add a little more broth if necessary. Let it cook for several minutes until the desired consistency is reached.
  7. Remove the bay leaf and pass everything through a blender.
  8. Pour the sauce over the meatballs and cook for a few more minutes over low heat.
  9. Let it sit for about ten minutes before serving.
