We offer to cook Albondigas – Spanish meatballs in sauce. As the etymology of the word suggests, Albondigas is a recipe of Arab origin that has been passed down for centuries (Arabic al-bunduqa – “ball”).
Ingredients:
For the meatballs:
- 500 grams of ground beef
- 250 grams of ground pork
- 1 clove of garlic
- chopped parsley
- salt
- pepper
- 1 egg yolk
- 3 tablespoons of breadcrumbs
- flour
- 4 tablespoons of milk
For the sauce:
- 2 tablespoons of olive oil
- 1 small onion
- 1 clove of garlic
- 1 tablespoon of flour
- 1 glass of white wine
- 2 ladles of broth
- 1 bay leaf
- salt
Preparation:
- Chop the onion and garlic clove.
- In a large bowl, mix the minced meat with milk, egg yolk, breadcrumbs, chopped onion, parsley, salt and pepper. Let it sit for about ten minutes.
- Form small balls (the size of a ping-pong ball) from the resulting mixture, roll them in flour and fry over medium heat until golden brown (they should not be overcooked).
- Leave the meatballs in the pan.
- In another pan, fry the garlic cloves and onion in oil. When the onion is sautéed, add a tablespoon of flour and stir a little. Add a glass of wine and two ladles of broth.
- Add the bay leaf, salt and pepper to taste, add a little more broth if necessary. Let it cook for several minutes until the desired consistency is reached.
- Remove the bay leaf and pass everything through a blender.
- Pour the sauce over the meatballs and cook for a few more minutes over low heat.
- Let it sit for about ten minutes before serving.
